He's not gaining an advantage until he touches the ball. In the meantime the defender has played the ball deliberately. That the ball didn't go where the defender intended is immaterial:

 'A player in an offside position at the moment the ball is played or touched by a team-mate is only penalised on becoming involved in active play by:

•  interfering with play by playing or touching a ball passed or touched by a team-mate or

• interfering with an opponent by:

  • preventing an opponent from playing or being able to play the ball by clearly obstructing the opponent’s line of vision or
  • challenging an opponent for the ball or

 

  • clearly attempting to play a ball which is  close when  this action impacts   on an opponent or
  • making an obvious action which clearly impacts on the ability of an opponent to play the ball or
  • gaining an advantage by playing the ball  or  interfering with an opponent when it has:
  • rebounded or been deflected off the goalpost, crossbar, match official or an opponent
  • been deliberately saved by any opponent'

The defender only tries to get the ball because of the striker. He can't know if it is offside or not. As soon as the striker moves towards the ball he is interfering with play. Any touch is minimal. You don't award a goal to the player who deflects a shot that is on target anyway when going in. That pass barely changed direction or speed.

Rules are rubbish.

From a refereeing forum, this might make things simpler... 

 

Before the defender deliberately plays the ball, the attacker has not touched the ball, the attacker hasn't prevented the opponent from being able to play the ball, the attacker hasn't challenged the opponent for the ball, the attacker hasn't attempted to play the ball, or made an action which impacted on the ability of the opponent to play the ball. As the offside law is written, it simply cannot be offside.

The rules might be but the interpretation of them for this goal is 100% correct.

Exactly. The interpretation may be correct, but if the defender had just left it, it would have been offside. We’ve seen this before, the defender is just trying to be safe, and doesn’t think he can rely on the ref to call it. Maybe defenders just need to trust var a bit more now, and take the grace decision to leave it.
