The mushrooms are sauteed for about 20 minutes with butter and Worcestershire Sauce, with a generous dash of dark soy sauce. The Memsahib loves my cooking. Chocolate is utterly wonderful in a chili - adds real depth of flavour (a tablespoon of cocoa powder is what I use).
