Bitterballen are meant to be really gloopy on the inside, so drying the mix out before making the balls loses some of the effect. It's almost like a Kiev in essence. It's 'resting' at the moment while the Memsahib and I work our way through Trappistes Rochefort 6, 8 and 10 and a bottle of Tynt Meadow. The sauce was a tomato base with garlic, pesto, oregano and paprika. The topping was keema (lamb mince spiced with chilli, garam masala and cumin), chicken breast (marinated in Madras curry), mushrooms and onion fried in coconut oil.
