Sure, Man City/Liverpool/Arsenal can do that and not suffer for it because the sheer quality and comfort on the ball of their defenders, but just doing it for the sake of it on the grounds of football principles, is plain suicidal with League 1 quality defenders. I'm all for playing out from the back as a general principle, because you tend to retain possession better (as opposed to big aimless hoofs downfield), but doing it in all circumstances regardless of the danger is going to get you in trouble on a regular basis.

Sometimes, in any given move, the strength and organisation of the opposition's press means that you need to go long and accept that they did their job well on that occasion. That's not the end of playing out from the back for that game because they will probably tire and drop off at some stage. It doesn't make it the wrong tactic but maybe it's not appropriate right here and right now, particularly so with League 1 defenders. The example above is frankly just embarrassing. If the manager is insisting on it in every situation then players will soon lose any belief in what they are being asked to do. Good sides and good players (and managers) know when to be pragmatic and just get the ball clear. Bolton didn't suddenly become a bad side, but the whole of League 1's eyes will light up if they do the above on any regular basis.
