As long as no part of the bird is less than 70c then its safe to eat and will be juicy at that level. Oh and remember to let it rest for an hour. If you don't bother to warm it up first and just stick it in stone cold, then you are on to a loser straight away. You also need to get some serious moisture on your bird. You gotta baste the whole thing with copious amounts of juice....and once she is hot and leaking you gotta keep dripping the bird's own juices everywhere. So many people in denial it’s frightening, the only person that can make turkey edible was Bernard Matthews and chances are he was probably using horse meat as well.
