Cheers mate...on the first attempt, the leg just never seemed to dry out properly...during its first winter the outside seemed to glisten & eventually it just went rank. I put it down to a damp environment, with insufficient air flow.

Ah I see, I’m going to try to make some Chorizo this summer, should be interesting.
