ladyram Posted November 13, 2016 Share Posted November 13, 2016 The thing with turkey is it's very lean, so you have to keep basting it, and get some flavoured butter under the skin (careful not to tear it), then it's important to rest it for as long as you've cooked it, let the flavour develop.
