In theory the airlines could formulate routes which did not pass over French airspace to avoid the strikes however how practicable that would be is debatable it would also be likely to be more expensive for them regards fuel consumption and potentially dangerous if the plane had to emergency land

Not if you happen to be filming Last of the summer wine at the time and it develops a fault whilst racing down a hill for comedic effect.
