Whether its some obscure Belgian cheese, or a traditional micro-cheesery specialist product made by people with cheesy hands and a faint whiff of puke about them...... or even summat normal, heterosexual and missionary position like mild cheddar..... This is a sheep's milk cheese a little similar to feta but a little sharper and creamier but less salty than feta; delicious with salads or crumbled on a pizza top. Manchego extra mature. A really mature Manchego can give a Parmesan a run for its money delicious finely grated over pasta. Love cheese; the cheesier, the better! Ewetube Posted January 9, 2014 Share Posted January 9, 2014 Farmfoods did have some gorgeously mature Cheddar at £5 a kilo. Got some recently though and it was very disappointing. Why can Cheddar described as mature be so variable? It can range from very mild to very strong especially stores own brand stuff, even from week to week. I'd say cheap stuff is variable, you never quite know what you're going to get. We usually feed it to the kids and hide the good stuff for ourselves.
