Just playing 'dig up an old thread' at the moment. Simple definition: An ale (includes stouts) is brewed using a top-fermenting yeast at relatively high temperatures A lager is brewed using a bottom-fermenting yeast at relatively low temperatures. Both are types of beer. Cream-flow refers to the dispensation method for presentation and is nothing to do with the brewing process. It is when a mix of carbon dioxide and nitrogen is used to pump the beer, or when opening a can of the beer, a 'widget' of nitrogen is released. Nitrogen forms smaller bubbles - and the same volume of smaller bubbles will have a greater surface area and will taste 'creamier' or smoother.
