If you haven't got a balloon whisk use a fork with a good amount of elbow grease. Then cover and stick it in the fridge for an hour before using it. Now go cook! It starts to rise straight away when you put it in the hot tray with the hot fat and sometimes has better results if you want them a tiny bit squishy in the middle.
