No matter what I do to courgette, it still tastes of nowt. Maybe it's just me and my taste buds? I will try that. I think the courgette acts more of a filler to be honest. The most I've ever used in one dish is 2tbs because otherwise wouldn't it over power everything else? Plus, you'd still have the basis of the sauce with the other toms? Well, I made it up myself after having one from my local Indian take-away, the menu described it like this... "Pathia - hot, sweet and sour cooked with maximum tomato puree", but I`m sure you could swap most of the puree for more tinned of fresh chopped tomato`s. I smother mine with tomato puree, green pesto and grated cheese before popping it under the grill until the cheese melts. You can add whatever topping you like ofc but its lovely without. You could also use it to make meatballs though using roughly the same ingredients (you might want to take the garlic or herbs out, depending how you like burgers) I did them yesterday beef/turkey/pork/lamb mince mixed herbs (about 1tsp) minced garlic salt &pep mix all together, make into rounds about as big as gobstoppers put em in tomatoe based sauce (get that up to simmering point first) cook for about 20 - 25 mins, turning occassionally to make sure they're cooked through buy the extra lean mince, cos you can't cook it to begin with to get the excess fat out Link to comment Share on other sites More sharing options...

Mmmmm, pizza - a great idea if you haven't got any naans, is to use the crusts from a loaf of bread instead. (lightly toast one side before you do the topping and get rubbing a cut clove of garlic on it before the toms go on and chuck everything else on top.
