it's not actually. Goose is tradition, Turkey is american influence.

The thing with turkey is it's very lean, so you have to keep basting it, and get some flavoured butter under the skin (careful not to tear it), then it's important to rest it for as long as you've cooked it, let the flavour develop. Turkey giblets make the most awesome gravy anorl.

I taught Gordon Ramsey all he knows see. 

Am doing lamb this year anyway :p
